I have coordinated four hundred and eleven weddings here and I can tell you the thing that makes a day: not the flowers, not the band, not even the weather. It is whether the people running the place are on your side. We are.

There is one wedding a day because I will not split my attention between two couples, the kitchen is ours because I will not apologise for someone else's chicken, and the beds are in the house because the morning after is half the point.

I have roasted on the same machine for eleven years and I still taste every batch. The thing I have learned is that the roaster matters much less than the buying: a great coffee roasted carefully is lovely, and a dull coffee roasted perfectly is still dull. So we spend our money at the farm, not on the fit-out. If a bag ever tastes wrong to you, write to me and I will send another one and want to know why.
